When there's pre-recorded music of the greatest artists in history, why hire a jazz band for a bar or restaurant?
The vibrations of live jazz fill the space in a way that speakers simply can't. They bounce off of the walls, move the body, and penetrate the soul. That's how a room can literally feel like it's buzzing. It wakes you up from the routines of everyday life and its burdens like going to work, running errands, and taking care of the kids (joking).
Speakers on the other hand sound flat and monotone in comparison. They may as well be like wallpaper. They're there, but you hardly notice them and it almost doesn't matter if it's bad, good, or great. They have a limited dynamic width and lack the richness of live music.
Having a band creates a memorable experience in an elevated atmosphere where the soundtrack to the evening is live and crafted on the spot! No two sets of jazz are ever the same so the magic is spontaneous and can never be recreated exactly the same way twice.
It keeps guests longer and keeps them eating and drinking more so the venue hopefully makes more money. When the night feels more like an "event" rather than just another night out, guests are willing to spend more. Also, when they're having a good time, they'll be looking to come back again and again so you get a consistent group of regulars.
A good band ought to generate in revenue at least double what they're charging. That means if they charge $300, they ought to generate at least $600 more in sales than if they weren't there at all. It's a collaborative effort between the artist and the venue to get folks through the door and get those sales up.
Also, having live jazz provides built in marketing for your venue. You get reusable videos (with permission) of the artists playing your space to a bumpin crowd which makes the room look like a destination. You can list your venue on a dozen event calendars and get visibility that wasn't there otherwise. And lastly, you'll get posters that mark the date as a special event in time and space.
